SFH Paleo Protein Coconut Waffles

Ingredients:

  • 1/2 cup SFH protein
  • 1/4 cup tapioca flour
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 4 eggs
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract

Directions:

  1. Heat waffle iron according to instructions and coat with coconut oil.
  2. Combine protein powder, tapioca flour, coconut flour, baking powder, and cinnamon in a large bowl.
  3. In a separate bowl, whisk together eggs, almond milk, and vanilla extract.
  4. Add dry ingredients to wet and mix until well combined (mixture should be pretty thick).
  5. Pour batter onto waffle iron and use as directed. Repeat with remaining batter.
  6. Top with fruit, chocolate chips, nut butter, maple syrup, etc.
  7. Enjoy!
